Our best (vegetarian) Fajitas!
Ingredients
- 3 bell peppers any colour
- 1 red onion
- 1 can black beans
- 1 pack store-bought tortillas about 8
- sour cream, grated cheese, guacamole optional
Fajitas spice mix
- 1 tsp salt
- 1 tsp chili or cayenne pepper
- 2 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp ground cumin
- 1 tbsp cornstarch
Guacamole
- 2 avocados
- salt to taste
- lemon juice from half a lemon
- pinch of chili powder
Instructions
- Chop onion and peppers in thin slices, then fry them with some oil in a large skillet until soft. You can add a sip of water to accelerate the cooking process.
- Once they start softening, add your spice mix.Let it cook another 5 minutes until the peppers are fully softened and add another sip of water if it becomes too dry.
- In a small pot, heat up the beans. Add some salt and garlic powder to taste.
- Warm up your tortillas in a pan or microwave.Fill them with your fajitas mix, beans, sour cream, cheese and guacamole
Guacamole
- Mash 2 avocados, then add juice of half a lemon and add a pinch of salt and chili powder. Mix well & enjoy!
