Mini Banana Pancakes
Ingredients
- 2 bananas, peeled and cut into ½ cm (¼ inch) slices
- 70 g flour (½ cup)
- 1 tbsp sugar
- 1 pack baking powder (15 g)
- 70 ml milk (2.5 oz)
- 1 egg
- 1 tsp vanilla extract
- coconut oil to fry
Instructions
- Prepare the dough: Combine flour, sugar, baking powder, then add milk, an egg and vanilla extract and whisk until fully combined. You want to have a thicker dough that is not too liquid to make sure the banana gets fully coated.
- Bake the mini banana pancakes: Add 1 tsp of coconut oil in your pan and heat it to low to medium heat. Now dip one banana slice at a time in your dough to fully coat it, then transfer into the pan. Flip it over when the edges are starting to brown. Repeat for all banana slices, and occasionally add more coconut oil if the pan is dry.
