5-minute Spinach Pesto

Imagine fresh, nutrient-packed spinach leaves blended with fragrant garlic, creamy Parmesan cheese, and rich walnuts, all drizzled with olive oil to create a smooth and velvety pesto sauce.
That's what you're getting with this easy Spinach Pesto, which comes together in absolutely no time and is perfect to serve with pasta, fresh veggies or as a spread on grilled bread. It's fantastic to make ahead and boost your lunch and weeknight dinners with nutrients and mouthwatering flavours!

Ingredients

  • 1 bag fresh spinach (about 200g, washed)
  • 1 garlic clove
  • 1 tbs salt (add more to taste)
  • 100-120 ml olive oil (add gradually to get desired texture)
  • Juice of half a lemon
  • 1 handfull nuts of choice (we recommend walnuts, pine nuts or sunflower seeds)
  • 3-4 tbsp grated parmesan (optional)

Instructions

  • Wash the spinach.
  • Throw all ingredients in your blender or food processor.
    If your are using parmesan, add it and only after blending and tasting add salt if needed because the cheese is quite salty by itself.
  • Blend for 3-4 minutes on high speed. Add more oil if needed to get the desired creaminess, and blend.

Storage

  • Store in a jar and cover the top with a layer of olive oil. Store for up to a week in your fridge.
