Asian Green Power Salad

Ingredients

  • 1 small cucumber, peeled and seeded
  • 1 ripe avocado, seeded and cubed
  • 100 g edamame beans
  • 1 handful baby spinach, chopped
  • To garnish: Sesame seeds

Sauce

  • 1 garlic clove
  • ½ tsp chili oil
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp honey (or agave nectar)

Instructions

  • Prepare your sauce by pressing a garlic in a bowl and adding the chili oil, soy sauce, sesame oil and honey, and mix well
  • Cut the cucumber along the long side in half, then scoop out the seeds. Cut both halves in 0.5cm thick slices. Cut avocado in cubes, and roughly chop baby spinach.
    Add all veggies into a bowl, pour dressing over and enjoy!
