Chili Sin Carne

A good Chili should only be two things: easy to make and packed with flavours. That's what we aimed for with this vegetarian recipe.
Since it's mainly based on canned foods, it requires very little effort. The mix of spices combined with a piece of dark chocolate make this recipe a classic go-to for every season. Serve with rice, nachos and sour cream - yummy!

Ingredients

  • 1 Red bell pepper
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp oil
  • 250 ml veggie broth 1 cube dissolved in 250 ml water
  • 400 g diced tomatoes about 1 can
  • 400 g kidney beans about 1 can
  • 400 g black beans about 1 can
  • 15 g dark chocolate at least 90%, sugar-free

Spices

  • 1 tsp paprika heaped
  • 1 tsp ground cumin heaped
  • ½ tsp chili

Instructions

  • Finely chop one onion and 2 garlic cloves. Chop the bell pepper into small cubes.
  • Pour some oil in a large pot and fry onion and garlic for 4-5 minutes or until translucent. Add paprika powder, ground cumin and chili and fry for another 4-5 minutes to let the flavours elaborate.
  • Add 250 ml veggie broth, canned diced tomatoes, beans, bell pepper and dark chocolate. Let it simmer for 20 minutes, and stir occasionally to make sure it doesn't burn. Let it sit for 10 minutes to cool down & enjoy!
  • Optional, but highly recommended: top with sour cream to balance flavours
