Combine ingredients: Combine all ingredients in a bowl and mix well
Bake: Scoop about 1 tbsp of dough per cookie onto parchment paper and flatten into the desired cookie shape. Leave sufficient space between cookies. Bake for 15 mins at 180 degrees celsius. They will harden as they cool, but should be lightly brown around the edges.
Store: These healthy cookies are best enjoyed warm (like a banana bread). Consume them within one week if refrigerated. You can store them in the freezer for longer. We recommend giving them a quick re-bake once defrosted to get some texture back.
