Simplified Turkish Eggs
This beautiful dish is inspired by Turkish eggs, aka Cilbir. It's not only a delicious and satisfying brunch idea but great for any time of the day. These Turkish-inspired eggs consists of a poached egg that is served on top of a bed of garlicky yogurt and a drizzle of melted, spicy butter. Top it with some herbs, such as dill or chives and enjoy with warm slice bread for dipping.

- 150 g greek yoghurt
- 1 garlic clove (grated or finely chopped)
- salt to taste
- 1 poached egg
- optional: dill or chives (the dish is traditionally made with a lot of dill)
Spicy butter
- 40 g butter
- 1 tsp smoked paprika
- ΒΌ tsp chili powder
In a deep plate, combine greek yoghurt, minced garlic and dill or chives. The traditional dish is made with a lot of dill, but depending on taste and availability, chives will give it a fresh kick. Mix together and add salt to taste.
In a pan, melt the butter. Turn off the flame and add smoked paprika and chili powder. The spices burn really fast, so make sure the butter is not bubbling hot anymore. Set it aside.
Poach an egg: Crack an egg into a mug. Add 1 tbsp white vinegar in a pot of water. Bring it to simmer (not boil). Using a spoon, create a whirl by stirring really fast. Then gently pour the egg inside the whirl. Let it cook for 2.5 minutes. It might not look as pretty as at your fav brunch spot, but it tastes just as good! Place the eggs on top of the yoghurt, and drizzle over the spicy butter. Top with some fresh herbs and enjoy!
