Ingredients

  • 1 crust (store bought tart crust, but you can also use puff pastry)
  • 4 tomatoes
  • 1-2 tbsp dijon mustard (not too spicy)
  • 1 tbsp Olive oil
  • 2 pinches salt
  • herbes de provence

Instructions

  • Pre-heat your oven to 180 degrees.
Butter your mould to get a crunchier crust, or leave your pie crust on the parchment paper if you don't mind - both works! Lay the dough in your mould, press it to the mould and use a fork to poke a handful of holes in the crust.
  • Spread 1-2 tbsp of Dijon mustard on your crust. The whole surface of the dough should be covered by a thin layer.
  • Cut 4 juicy tomatoes in thin slices (about 3 mm). Place them on them all around, and sprinkle over herbes de provence, salt and olive oil.
Bake at 180 degrees for 20 minutes.
